2023 SINGLE VINEYARD SAUVIGNON BLANC

Hand picked fruit was carefully sorted and gently pressed. Production has evolved with a significant portion now fermented in oak as we develop texture to balance fruit power. This year 100% was fermented in French oak, 20% of that new - this is to develop texture and palate weight than oak flavour, and to intensify that further, we lees stirred and let 20% of the wine go through malolactic fermentation. This again completes the texture build, while adding complexity and finally softening that delicious natural acidity.

With its vibrant pale straw colour, the wine is bright and aromatic with green apple, white stone fruits, hay and some tropical notes. The palate highlights all that work in the winery, adding structure, roundness, as well as a creamy and delicate texture.  The variety’s hallmark limey acidity gives zip to the stone fruit, apple and some tropical flavours.  Packed with concentration and layers of complexity, the wine remains light, fresh and crisp with delicacy and finesse through to the finish. This really is for lovers of serious Sauvignon Blanc, but foremost for those who love fine textured whites. It will open up over the next 6 months and give plenty of enjoyment over the next few years.
