Dominique Portet was an instrumental figure in highlighting Australia’s potential for sparkling Rosé when at Taltarni. That dedication to the style continues with this highly acclaimed sparkling, which is light, fresh and as James Halliday notes, “A totally delicious and elegantly poised wine…”
Chardonnay fruit for this sparkling wine comes from the same vineyard as we use for the highly awarded Origine Chardonnay - a mature site in the Upper Yarra Valley with volcanic red soils on a steep, fast-draining slope at a relatively high altitude of 250m.
Long regarded as Australia’s first true Provence style - and arguably most successful - dry Rosé. This has been a mainstay of Dominque Portet since the beginnning, and is now stronger than ever thanks to Rosé’s global success. Pale pink with ripe fruit, creamy mouthfeel and crunchy acidity - it’s everything you’d want from a Rosé.
It’s no secret that the Yarra Valley produces exceptional Chardonnay, after all we produce two. The Fontaine, showcases the pure fruit style - with a hint of oak, good acidity and poise, it’s as fresh and crisp as mornings in the Yarra.
Showcasing the best of what Yarra Valley Cabernet Sauvignon can achieve - poise, subtle detail and finesse. Juicy and fresh this is a wine with personality and huge approachability at such a young age.
We love how our Kiwi cousins have showcased this variety to the world, but that’s also just one style. The Yarra Valley’s cool climate is ideal for the variety too, where we manage to coax more citrus and stone fruit characters with a creamy texture and a savoury finish.
The cool climate ripens the grapes slowly, retaining acidity and vitality; wild ferments add complexity; maturation in large barrels give us texture; while the French oak seasons, contributing to the aroma and flavour.
With 10 generations of winemaking history going back to Bordeaux, Cabernet will always be part of the Portet DNA. Showcasing the Yarra Valley’s reputation for producing some of best Cabernets in the country. This wine has elegance, generosity and refinement, delicious and approachable now, it will also cellar impeccably.
The richness found in Australian Shiraz is world famous - but the backbone and acidity that balances the fruit’s intensity is what makes Heathcote’s Cambrian soils so important. We like to think it’s the perfect embodiment of power with grace and concentration with freshness.
Layered with elegance, grace and ageing potential, this tribute is a memorable wine to share either now or many years into the futre.
