Chardonnay fruit for this sparkling wine comes from the same vineyard as we use for the highly awarded Origine Chardonnay - a mature site in the Upper Yarra Valley with volcanic red soils on a steep, fast-draining slope at a relatively high altitude of 250m.
Long regarded as Australia’s first true Provence style - and arguably most successful - dry Rosé. This has been a mainstay of Dominque Portet since the beginnning, and is now stronger than ever thanks to Rosé’s global success. Pale pink with ripe fruit, creamy mouthfeel and crunchy acidity - it’s everything you’d want from a Rosé.

We love how our Kiwi cousins have showcased this variety to the world, but that’s also just one style. The Yarra Valley’s cool climate is ideal for the variety too, where we manage to coax more citrus and stone fruit characters with a creamy texture and a savoury finish.
The cool climate ripens the grapes slowly, retaining acidity and vitality; wild ferments add complexity; maturation in large barrels give us texture; while the French oak seasons, contributing to the aroma and flavour.
