Chardonnay fruit for this sparkling wine comes from the same vineyard as we use for the highly awarded Origine Chardonnay - a mature site in the Upper Yarra Valley with volcanic red soils on a steep, fast-draining slope at a relatively high altitude of 350m.
We love how our Kiwi cousins have showcased this variety to the world, but that’s also just one style. The Yarra Valley’s cool climate is ideal for the variety too, where we manage to coax more citrus and stone fruit characters with a creamy texture and a savoury finish.
It’s no secret that the Yarra Valley produces exceptional Chardonnay, after all we produce two. The Fontaine, showcases the pure fruit style - with a hint of oak, good acidity and poise, it’s as fresh and crisp as mornings in the Yarra.
The cool climate ripens the grapes slowly, retaining acidity and vitality; wild ferments add complexity; maturation in large barrels give us texture; while the French oak seasons, contributing to the aroma and flavour.
