One of two Chardonnays we produce, it has a hint of oak, good acidity and poise. This modern style of Chardonnay balances freshness and crispness with fruit weight and texture for immense drinkability.
The fruit from a mature high elevation vineyard is accentuated by wild ferments, large French oak barrels, and a good proportion of Malolactic fermentation - giving our premium Chardonnay intensity, poise and complexity.
Barrel fermentation and lees stirring add complexity and texture, making this wine look more like a white Bordeaux than your typical new world Sauvignon Blanc. Citrus acidity, stone fruits, gunflint and honeycomb with great texture and mouthfeel.
Grown on the cellar door site in Coldstream, this Sauvignon Blanc based dessert wine is a beautifully balanced wine with a wide spectrum of aromas and flavours. All while still being appealing fresh with modest sugar levels that make pairing this wine easier and gives much diverse application both on its own and with food. Made in a classic French Sauternes style picked when the fruit hits the botrytis point in the cool months of May with much higher sugar levels than a drier style of Sauvignon Blanc.
