2018 DOMINIQUE PORTET CABERNET SAUVIGNON
The blend comprises of 90% Cabernet Sauvignon, 5% Petit Verdot, 3% Malbec, 2% Cabernet Franc. As always, the grapes were picked by hand on 29th March. The fruit was sorted on our state-of-the-art sorting line, then destemmed and gently crushed. The wine spent 25 days on skins to develop structure and a silky texture while still at peak freshness. It was aged in French oak (40% new) for 14 months before being estate bottled in July, preserving the fruit’s lovely aromatics.
Bright, pure fruited Cabernet Sauvignon that’s tightly knit yet with generosity and concentration with a red fruit spectrum - think raspberries, cherries, plums… with some darker brooding, brambly structure coming through on the palate. Balancing the fruit, are mineral notes like graphite/pencil shavings, refreshing acidity and tannins that are long and silky. The blend of varietals takes it from great, to exquisite, ‘seasoning’ the wine with an extra layer of flavour, character and texture. All culminating in a wine that is elegant, refined and that will cellar impeccably.

'Ripe dark cherry and cassis, creamy mocha oak, seductive perfume, and just a flicker of roast red capsicum. It’s plush and smooth, ripe and sweetly fruited, chocolate and biscuit spices, maybe some tobacco savoury stuff, silky dense tannin, a slight nippiness to the acidity, finishing long and fresh, a subtle dried orange peel tang in the aftertaste.
