The Champagne flute evolved to catch the yeast sediment in its base. The shape hasn’t changed much; however, with modern disgorging, it’s no longer for sediment, but to preserve the bubbles and release the mousse in a steady stream. Non-vintage and younger bubblies work best with traditional flutes such as Dominique Portet’s branded version.

A new méthode champenoise sparkler (6o per cent pinot noir and 4o per cent chardonnay) from the cooler eastern part of the Yarra Valley. A delicate “barely there” pink, with light, elegant bubbles and a delightful aroma of summer berries and grapefruit. In the mouth it’s poised and refreshing, with a long, dry finish due to light dosage, shown by the LD on the label. Match with salmon blinis.

Part of the time Dominique spent with Taltarni was dedicated to the development of the Clover Hill sparkling winery in Tasmania, a simply stunning vineyard making some beautiful sparkling wines. Here in the Yarra he has set his hand to making a sparkling rosé, a blend of pinot noir and chardonnay (see, he couldn’t help but get involved in all aspects of the Yarra). A lovely, delicate wine with an excellent bead and delicacy.

A Yarra Valley pink sparkler made by a Frenchman. This pert wine is great with food and has a very light dosage - there’s not much sweetness to it.

This is a dry finishing and very sophisticated sparkling wine. It is also a new listing, so you should act quickly.

Dominique Portet’s winery is surrounded by the rolling hills of the lovely Yarra Valley. Rosé both still and sparkling, is a speciality. This bubbly version has a lovely pale, blushing colour and the aroma is perfumed with strawberry-like fruit. It tastes clean and fine, with enough richness for excellent balance.
